From Wilderness to Wellness

Outside an ancient forest in northeastern Poland, a California-based herbal tea company demonstrates its commitment to FairWild foraging.
Babia Gora, population 30, sits at the edge of the Bialowieza National Park, the Polish side of Europe’s last primeval forest. The village is the definition of bucolic: A rooster crows into the gray November sky. Two cows graze in a meadow where patches of dry grass signal winter’s approach. A thicket of birch trees stretches across the horizon, near the border with Belarus. This afternoon, Janina Zubrycka, a spry, bespectacled 62-year-old, is digging for the last dandelion roots of the season. Suddenly she lets out a jubilant howl.
“It’s a winner,” she says, grinning at her fellow collectors, Tolik Luksza, 75, a retired farmer, and his wife, Olga, 64.
